Sunday Dinner-ish post: Legume Love
I ate very very badly this week, by my standards, so today it was time for fruits and veggies, yes indeed.

For lunch I chopped two zucchinis and one tomato, tossed in extra-virgin olive oil with salt, oregano, and granulated garlic, and baked at 450 until they were almost done. Then I threw in a handful of raw pine nuts for a little protein and let them toast a bit.

For dinner, a quick salad that really came to life with help from good ingredients. I got a bottle of good-quality olive oil last week, and a can of Eden chickpeas, which in my mind are the best canned chickpeas going.

Salad:
1 Romaine heart, washed and torn into small pieces
Half a can of chickpeas
2-3 oz. feta cheese
Juice of a lemon
Drizzling of good olive oil
Sprinking of salt

I also tossed in some avocado I had leftover from something else. It wasn't even necessary. Great salad. I really tasted the fruitiness of that olive oil... I think I might just replicate the salad for dinner tomorrow.

I actually considered spending some of my tax stimulus whatever money on $70 worth of Eden canned beans. I was getting all a-flutter at the thought of being so stocked up on delicious beans. But then I kind of came to my senses. I'll wait for a sale at Publix. Sigh.

I have been frequently craving beans lately. It doesn't help that I recently read the average American only eats 6.5 pounds of beans annually. How...minimal! I love beans, from the rich-but-delicate cannelini, perfectly paired with dark greens and chicken broth in a soup, chickpeas tossed into a salad or fragrant with Indian spices in chana masala, black beans or pintos paired with sweet potatoes, cheddar cheese and cumin, black-eyed peas cooked up Southern-style with some good organic bacon (I would say ham hock...but try finding a naturally raised ham hock around here...)...

I also ate 2 peaches and half a pineapple! And I bought a jump rope at Target and I have been jumping away...I am so much more inclined to exercise when I can do something simple and playful.

May I come over for dinner tomorrow? That salad sounds heavenly! Maybe you could also replicate your lunch as a side dish? ;)

We eat a lot of beans at my house -- by choice, difficult as that might be for some to imagine! My favorites are 15-bean soup and split peas (also for soup). Yummy.

That would be a lovely meal, wouldn't it? I was in a Mediterranean mood I guess.

:::chomping down a chocolate donut::: Yeah, I've been kinda bad this week too... Although it's roller-blading season, so I get a waayyy bigger calorie allowance. :)
LOVE the salad - especially because it contains no tomatoes, which try as I might to like, I hate.
Do BBQ baked beans count? ;)

I don't worry about calories so much as content. I go waayy over the supposed fat recommendation for the day between buttered toast, whole milk yogurt, olive oil on my veggies, and maybe chicken thighs or stew beef for dinner... The only foods I really try to limit are sugar and refined flours because they either make me tired or mess up my digestion. But I do still eat dark chocolate every day.

My dad hates tomatoes, too--well, he will eat them cooked, but not in a salad. Never!

Baked beans do count toward your 6.5 pounds of beans a year, I'm sure!

Because of my medication I've put on 20 lbs in the past 2 years. I'm still not technically overweight, but I can't fit into my clothes anymore either, and this is unsettling.

So anyway, do you recommend any cookbooks or recipes? I'm trying (in vain) to learn how to cook since my husband wouldn't know a vegetable if it bit him in the ass (unless it's a pepper or something). Now that I've moved to this new neighborhood I get a lot more exercise because there are a lot of things close by that I can walk to when the weather's nice, and there's room to ride a bike if I ever get one, but I'm trying to wean myself off of fast food and junk food.

If I have the time (hopefully) I will make a dedicated post this week with some tips on eating better without becoming a master chef or something... You're not the first person to ask and I've been meaning to do it for awhile, and I have some time this week, so...stay tuned! Hopefully it will be at least minorly helpful.
